Mango Salsa (Salmon)
If you LOVE sweet & salty foods, you’re going to love mango salsa. It’s exactly what it sounds like—salsa made with mangos! You can eat it with chips like you would a traditional salsa or you can top off a nicely cooked piece of fish like salmon. (I think fattier fish are the way to go with this salsa).
It’s really easy to make—
When I make dinner for 2, I use the following measurements:
1 mango, diced/cubed
1 large tomato
1/2 onion or 1/3 — whatever your preference is
1/4 serrano chile pepper, finely chopped (these are hot hot HOT!)
cilantro — finely chopped
lime juice — I use half of a lime and I squeeze the heck out of it
salt and pepper — to taste
1 tsp or less of extra virgin olive oil
optional: minced garlic (1 clove) or a dash of garlic powder — this combined with the fresh onion could make your mouth not feel so nice so sometimes I skip it
